Gozdawa gær

Ølhunden er officiel distributør i Danmark af tørgær fra den Polske producent Gozdawa.

Jeg bruger selv deres forskellige gærtyper i bryggeriet og de performer absolut mindst på niveau med tørgær fra de ellers kendte producenter som Fermentis, Lallemand og Mangrove Jack, alle gærtyper kan fås i 10g og 500g pakker (Old German Altbier og Belgian Witbier kommer i 250g pakker).

W34/70

Gozdawa W34/70 is famous German yeast strain applied for bottom fermentation beers,
especially for Pils or Lager beer type. Excellent sedimentation and optimized diacetyl
reduction according to temperature. Temperature of the wort: 9°C- 22°C, optimal 12°C-14°C.

Attenuation: 81-85%

Czech Pilsner 18

Gozdawa Czech Pilsner 18 is yeast strain applied for bottom fermentation beers,
especially for light colour beers like czech pilsner. Excellent flocculation and
sedimentation. Temperature of the wort: 9°C – 20° C, optimal 14°C.

German Lager W35

Gozdawa German Lager W35 is yeast strain applied for bottom fermentation beers,
specially developed for brewing lager at home. Very high attenuation and flocculation.
Temperature of the wort: 12°C- 22°C, optimal 12°C-17°C.

Hybrid Ale Yeast “Notty”

Gozdawa “Notty” is yeast strain applied for the top fermentation beers, especially
selected for ale. Fast fermentation with very high final attenuation. Temperature of the
wort: 11°C – 22° C, up to 17°C natural aroma, above 17°C aroma is slightly estery.

Porter & Kvass

Gozdawa Porter & Kvass is yeast strain applied for the top fermentation beers, especially
for darker and stronger beers (like Porters, Kvass). Fermentation tends to be slower with
good flocculation. Temperature of the wort: 16°C – 32° C, optimum: 22°C – 26°C.

Pure Ale Yeast 7

Gozdawa Pure Ale Yeast 7 is best universal yeast strain applied for the top fermentation
beers. Medium to high flocculation, high attenuation. Temperature of the wort above 20°C
will increase the presence of esters in the finished beer, fermentation between 16°C – 32°C.

Original British Ale Yeast 04 “Withbread”

Gozdawa Original British Ale Yeast 04 “Withbread” is famous yeast strain applied for the
top fermentation beers with neutral final aroma. It has origin from the UK. It has excellent
fermentation. Temperature of the wort: 15°C – 22° C, optimal 16°C – 19°C.

US West Coast “Chico”

Gozdawa U.S. West Coast “Chico” is yeast strain applied for the top fermentation beers. It
has origin from west coast of America, ferments very quickly with very clean final aroma.
Temperature of the wort: 14°C – 22°C, optimal 17°C – 19°C.

Bavarian Wheat 11

Gozdawa Bavarian Wheat 11 is German yeast strain applied for the top fermentation beers,
dedicated for wheat beers. Low flocculation and sedimentation. Temperature of the wort:
20°C – 32°C, optimum temperature of wort: 20°C – 26°C. To obtain typical wheat beer
characteristics at home, fermentation should be at high end of temperature scale.
Develops banana and ester flavours above 24°C.

Old German Altbier 9

Gozdawa Old German Altbier 9 is yeast strain applied for the top fermentation beers,
recommended for German Alts and British Dark Ale. Good flocculation and average
sedimentation. Temperature of the wort: 12°C – 25° C, optimum temperature of wort: 15°C- 20°C.

Classic Belgian Witbier

Gozdawa Classic Belgian Witbier is yeast strain applied for the top fermentation beers,
dedicated for Witbier and beer with spices. Average flocculation and sedimentation.
Temperature of the wort: 16°C – 25°C, optimum temperature of wort: 20°C – 24°C.

French Cider G1

Gozdawa French Cider G1 is French cider yeast strain applied for the homebrewers and the
brewing small quantities. Temperature of the wort: 10°C – 30°C, optimum temperature of

Mjød

Gozdawa Mead is high gravity wine yeast strain. Dedicated for mead. Temperature of the
wort: 18°C – 30°C, optimum temperature of wort: 20°C – 28°C.

East Coast 01 “Conan”

Gozdawa U.S. East Coast 01 „Conan” is the most famous yeast strain from the U.S. East
Coast, applied for all new wave American beers with fuity esters. Tropical fruit aroma
characteristic of the U.S. East Coast. High gravity strain with good attenuation and
medium flocculation. High gravity strain with medium flocculation. Temperature of the
wort: 15°C – 22°C, optimum temperature of wort: 15°C – 22°C.

Noble Saison

Gozdawa Noble Saison is the most famous yeast strain applied for Saison beer style it has
origin in the Walloon Region. Can be used to all farmhouse beer styles like Grisette, Bière
de Garde and many others belgian styles. Provide noble aroma with slightly citrusy and
pepper notes. High attenuation, low flocculation and sedimentation. Temperature of the
wort: 16°C – 28°C, optimum temperature of wort: 16°C – 24°C.
